Broccoli and Feta Frittata
Six Servings
INGREDIENTS
6 eggs
1/4 cup almond milk (plain, unsweetened)
2 garlic cloves, minced
1/4 tsp salt
1/2 tbsp olive oil
Ground pepper
1 cup onion, chopped
2 cups broccoli, chopped
1/8 tsp paprika
1/4 cup crumbled feta cheese
DIRECTIONS
Preheat the oven to 400 F.
Whisk together the eggs, almond milk, garlic, and salt and set aside.
Heat the olive oil in an oven-safe skillet over medium heat and add in the onion and broccoli. Season with a pinch of salt and pepper and cook until the broccoli is tender (6-7 minutes).
Stir in the paprika then add the egg mixture.
Gently swirl the pan around to distribute evenly.
Sprinkle with feta cheese and bake for 15-20 minutes or until the eggs are set.
Caution! The handle of the skillet will be very hot. Don’t forget to use your oven mitt.
