Broccoli and Feta Frittata

Six Servings

INGREDIENTS

  • 6 eggs

  • 1/4 cup almond milk (plain, unsweetened)

  • 2 garlic cloves, minced

  • 1/4 tsp salt

  • 1/2 tbsp olive oil 

  • Ground pepper

  • 1 cup onion, chopped

  • 2 cups broccoli, chopped 

  • 1/8 tsp paprika 

  • 1/4 cup crumbled feta cheese

DIRECTIONS

  1. Preheat the oven to 400 F.

  2. Whisk together the eggs, almond milk, garlic, and salt and set aside.

  3. Heat the olive oil in an oven-safe skillet over medium heat and add in the onion and broccoli. Season with a pinch of salt and pepper and cook until the broccoli is tender (6-7 minutes).

  4. Stir in the paprika then add the egg mixture.

  5. Gently swirl the pan around to distribute evenly.

  6. Sprinkle with feta cheese and bake for 15-20 minutes or until the eggs are set.

  7. Caution! The handle of the skillet will be very hot. Don’t forget to use your oven mitt.
