Wild Mushroom and Broccoli Rabe Frittata

INGREDIENTS

12 Eggs
1⁄2 c Nut Milk
2 Tbsp Avocado Oil
1 Bunch Broccoli Rabe,

Chopped

1 1⁄2 c Wild Mushrooms, Chopped

1 Bunch Cilantro, Chopped Salt

PREP

  1. Preheat oven to 450°F.

  2. Whisk eggs and milk in a bowl. Season with salt and set aside.

  3. Add avocado oil, broccoli rabe, and mushrooms to a skillet. Cook until tender, (~8 minutes).

  4. Pour in egg mixture and reduce heat to low. Cover skillet and cook for 2 minutes.

  5. Remove the lid and transfer skillet to oven. Bake frittata until the top is lightly browned (~4 minutes). To test, press down lightly in the middle of the frittata with your finger. If it’s firm, it's done.

Tasty Toppers: Cilantro, avocado, Kite Hill ricotta cheese, chives.
