Avocado Hummus Rainbow Wrap
Ingredients
1 large tortilla (can use any type: whole wheat, corn, spinach, etc.)
1/2 avocado
2 tablespoons hummus
1 tablespoon olive oil
1 cup arugula
salt and pepper to taste
1 cup thinly sliced raw veggies (can use any type: carrots, cucumbers, bell peppers, etc.)
1 tablespoon fermented veggie (e.g. sauerkraut, kimchi)
Prep
Toss the arugula with the olive oil and some salt in a medium bowl. Set aside.
Optionally, warm up your tortilla in the microwave first - this will make it more pliable and easier to wrap later on.
Place your wrap on a plate and spread the hummus in the middle.
Add the sliced avocado on top, then sprinkle with salt and pepper.
Layer the raw veggies on top of the avocado, and the fermented veggies on top of the raw.
Add the dressed arugula on top of everything, being careful not to overstuff the wrap.
Wrap the tortilla like a burrito:
Fold the left and right sides of the tortilla toward the center.
Roll the edge of the tortilla closest to you up and over the fillings.
As you roll up the burrito, use your fingers to push the fillings toward the center to create a company, cylindrical shape.
Cut your burrito in half and serve.
