Chai-Spiced Granola
This crunchy snack is filled with nuts and seeds with a delicious chai spice.
For Granola:
1 cup slivered almonds
1 cup chopped pecans
1/2 cup chopped walnuts
1/3 cup pumpkin seeds
1/3 cup sunflower seeds
1/3 cup sesame seeds
2 tablespoons hemp hearts
1 cup shredded coconut
⅓ cup honey or maple syrup
Pinch of fine sea salt
1/3 cup coconut oil, melted (and some extra for oiling pan)
1 egg white
1 tsp vanilla extract
For Chai Spice:
2 tsp ground cinnamon
1 tsp cardamom
1/4 tsp allspice
1/4 tsp black pepper
1/4 tsp ground cloves
1/4 tsp sea salt
DIRECTIONS
Preheat oven to 325°F. Oil a baking pan with coconut oil.
In a large bowl, combine the nuts, seeds, coconut, and spices.
In a separate bowl, whisk the melted coconut oil, sweetener, egg white, and vanilla extract.
Pour the mixture over the nuts and seeds. Stir well.
Spread the mixture on the baking pan.
Bake until the granola turns golden brown, about 20-25 minutes.
Do not stir granola while baking.
Remove the pan from the oven and allow the granola to cool before breaking apart into pieces. The granola will be soft when you remove it from the oven, but will crisp up as it cools.
Store in a glass airtight container.
