Avocado Po-ta-toast

INGREDIENTS

1 Sweet Potato

1 Avocado, Sliced

3 Tbsp Olive Oil

1⁄2 Lime or Lemon Salt

PREP

  1. Slice the sweet potato lengthwise into 1⁄4 inch thick slices.

  2. Place sweet potato slices in a toaster oven for 5-10 minutes, or until golden and

    crispy.

  3. Mix avocado slices with olive oil, lemon or lime juice, and a pinch of salt.

  4. Spoon out avocado mixture on top of the sweet potato slice.

  1. Tasty Toppers: Pomegranate seeds, smoked salmon, capers, an egg prepared over-easy or slow cooked (pictured), onion slices, chili flakes, cilantro, parsley, basil.
