3-Ingredient Keto Muffins

INGREDIENTS

2 cups Whole Nuts of Choice
5 Eggs, Whisked
Stevia and Spices, to Taste (Optional)

PREP

1. Preheat oven to 350°F.
2. Grease a 12-cup muffin tray.
3. Food process the nuts to form a flour.
4. In a large bowl, whisk together eggs and nut flour to form a batter.
5. Optional: Add in stevia and spices.
6. Pour into muffin tray.
7. Bake for 25 minutes until a toothpick inserted into the middle comes out clean.

Cinnamon Muffins: Cinnamon and nutmeg.

Coconut Muffins: Shredded coconut and chopped almonds.

Blueberry Muffins: Fresh blueberries.
